Nothing has happened with Noma this week. René Redzepi has not announced a new project, a new restaurant, a new manifesto, or a new apology. The thread is dormant, as it has been for several editions, and perhaps that is the right condition for it.

The history is well established: Noma opened in Copenhagen in 2003, was named the world's best restaurant four times, and closed its dining room at the end of 2023 after Redzepi announced that the economics of running the place — which had long depended on unpaid or underpaid stagiers — had become untenable. The closure was framed partly as ethical reckoning, partly as exhaustion, partly as something that had simply run its course. All three framings were probably correct.

What Redzepi does next has been the subject of considerable speculation. A food lab. Consulting. Writing. The category of "legendary chef at leisure" is not large, and those who have occupied it have tended to find that leisure is not actually what they wanted. Time will answer the question. No new answers have arrived this week.

The food world moves on the way it always has: toward the next luminous thing, the next restaurant that redefines what a meal can mean. Whoever that turns out to be has not yet announced themselves. Or perhaps they have, and nobody important has noticed yet. That is how it usually works.
